Easy Salmon with Red Pepper Salsa Recipe

Our family has an odd favorite meal–we LOVE Salmon and Sautéed Spinach. And, when I say “we,” I mean everyone, teen and tween included. There’s something about this simple meal that just works for all of us, and I recently kicked it up a notch with some homemade salsa, featuring Mezzetta peppers.

Easy Salmon with Red Pepper Salsa Recipe


  • 8 ounces Mezzetta Deli-Sliced Roasted Red Peppers, diced (equivalent to approx. 1 red bell pepper)
  • 3 Roma tomatoes, chopped
  • 1/4 white onion, chopped (use 1/2 if you really like onions)
  • 2 garlic cloves, minced
  • 1 lime, juiced
  • fresh cilantro to taste
  • salt & pepper to taste
  • Optional: 3 ounces Mezzetta Deli-Sliced Jalapeño Peppers, chopped (equivalent to approx. 1 jalepeno)
  • 4 salmon filets
  • salt & pepper to taste
  • 3 tablespoons extra light olive oil


  • Combine all ingredients in a bowl and enjoy! FYI, it's even better the next day, after sitting in the fridge overnight.
  • Season the salmon with salt and pepper and cook on medium-high heat about 5 minutes per side or to desired doneness. If your salmon has the skin on, it can be easily removed with a knife after it's been heated.
